Responsibilities

  • Lead and oversee all restaurant operations, ensuring consistent excellence and alignment with Belmond standards.
  • Act as a visible, hands-on leader on the floor, anticipating guest needs and delivering seamless, personalized experiences.
  • Develop the front-of-house team, fostering a culture of accountability, engagement, and continuous learning.
  • Work in close partnership with the Executive Chef, Bar Manager, and F&B Manager to deliver a cohesive and elevated dining experience.
  • Manage scheduling, staffing levels, and performance to balance service quality with operational efficiency.
  • Drive financial performance through cost control, revenue optimization, and analysis of key results.
  • Ensure full compliance with health, safety, and hygiene regulations at all times.
  • Act as an ambassador of the restaurant and the Belmond brand, building lasting relationships with both returning and new guests.

Requirements

    • Proven experience as Restaurant Manager or Assistant Restaurant Manager in a luxury or fine-dining environment.
    • Strong knowledge of fine service standards, wine, and high-end restaurant operations.
    • Natural leadership style with the ability to motivate, coach, and develop multicultural teams.
    • Strong guest-focused mindset combined with commercial awareness and business acumen.
    • Excellent organizational and communication skills.
    • Fluency in Italian and English.
