Position Description:
A Trimmer Operator can be assigned to the Production Area as a Knife Operator or Trimmer Operator. The operator will need to perform and understand the following:
- Understand machine safety and safety switches
- Understand machine controls
- Understand acceptable output of machine (product specification)
- Perform pre-start up analysis and maintain daily activity log
- Identify machine malfunctions and notify management
- Understand and maintain product flow and procedures
- Understand customer’s trim specifications and sub primals
- Make product change adjustments
- Maintain labor standards and pace
- Good Meat cutting skills for both Beef and Pork products
- Good knife sharpening skills
- Knowledge of various cuts/styles for Beef and Pork products
- Excellent communication skills
- Knowledge of production equipment
- Must be able to lift 5+ pounds
- Monitor and program metal detector and document performance
- Understand Food Safety, GMP, SSOP requirements
