As a Kitchen Trainee at Costa Navarino, you will embark on an exciting journey of hands-on training and skill development in the dynamic world of Culinary service. This traineeship period will provide you with valuable experience, mentorship, and the opportunity to ace the basics on a luxury, 5-star-branded property.

As our Kitchen trainee, you will:

  • Adheres to all company policies and procedures regarding food preparation, receiving, storage, and handling
  • Possesses comprehensive knowledge of the menu, including recipes, production methods, and presentation, ensuring consistency with the company’s brand standards
  • Ensures quality control of raw materials, meeting specified standards
  • Prepares and presents recipes in accordance with brand guidelines
  • Attends all required training sessions and seminars, maintaining up-to-date knowledge of materials, procedures, and best practices
  • Demonstrates the ability to complete responsibilities accurately and consistently within established timeframes to meet departmental goals
  • Follows meal preparation protocols for managing allergies and dietary restrictions

Requirements

  • Degree from IEK or Culinary School with a minimum of 2 years of study
  • Fluent in Greek and English, both spoken and written
  • Strong written and verbal communication skills
  • Well-versed in raw materials, recipes, and presentation standards
  • Able to accurately follow and execute standard recipes
  • Skilled in identifying allergens in both raw materials and recipes
  • Proficient in computer skills, including Microsoft Office (Word, Excel) and internet usage
  • Experienced in the proper operation and management of kitchen equipment and machinery
  • Knowledgeable in HACCP procedures and proficient in completing necessary forms
  • Familiar with basic cutting techniques and cooking methods
  • Skilled in baking techniques and understanding of various cooking grades
  • Able to manage inventory, refrigerators, and stock within assigned areas of responsibility
  • Proficient in all fundamental hot and cold kitchen techniques
