Summary of responsibilities:
- Assisting Executive Hygiene Manager/Hygiene Manager to Review Food safety policy annually and report to Director of culinary and GM for approval
- Assisting Executive Hygiene Manager to Review HACCP Manual on yearly basis
- Ensure Good Hygiene Practice Manual Book as a guidance for Food handler department are implemented on daily basis
- Participate on Hygiene walkthrough
- Established record system to support HACCP document
- Established all data and presentation for monthly hygiene meeting
- Participate on Monthly hygiene Meeting
- Participate HACCP Internal Audit.
- Assisting Executive Hygiene Manager/Hygiene Manager to review and create SOP and PP related with hygiene
- Participate on supplier audit for Potentialy Hazardous Food
- Monitor implementation of F&B and Engineering preventive maintenance list
- Work together with Engineering to ensure organized system of pest control prevention
- Work together with HR and legal regarding all government license hat related with Hygiene
- Work with outside Laboratory to do monthly microbiology test
- Taking food samples for every banquet event that attend by a minimum of 100 pax
- Compile data for food allegation issues which occur through QIAF and report to Hygiene Manager
- Involved in all external audit that related with hygiene
- Participate and contributing to the resort Hygiene program through education, interaction, and suggestion
Requirements
.
- Minimum bachelor degree in Food Engineering or Environmental Health.
- Understand HACCP, ISO 22000 or equivalent.
- Computer literate especially Microsoft Excel and Microsoft PowerPoint.
- Eloquent in English communication in both written and spoken..
