Navarino Dunes is looking for a Chef de Partie. The selected candidate will be responsible for mentoring and supervising their team, ensuring tasks are effectively allocated and monitoring inventory and costs. They will oversee the production and quality control of dishes in line with brand standards and the guidance of their superiors. The role requires excellent collaboration with other departments and the ability to resolve issues and address special customer requests promptly.
Responsibilities
- Follows all company policy procedures related to food preparation, receipt, storage and handling
- Full knowledge of the menu, its recipes, its production methods and the presentation of the dishes according to the company's brand standards
- Quality control of raw materials and specifications
- To organize, guide and distribute responsibilities to the team according to daily needs
- Operation: Presentation and listing of recipes according to brand standards
- Attendance of all trainings and seminars provided by the company and up-to-date knowledge on materials and procedures
- Ability to complete responsibilities correctly and consistently within the time frames we have set for completing departmental goals
- Solving problems and satisfying special customer requests
- Knowledge and adherence to meal preparation procedures for allergies and dietary habits
Requirements
- At least four years of progressive culinary experience, with a minimum of two years as a Demi Chef de Partie, preferably in a five-star hotel.
- Degree from IEK or Culinary School (2 years).
- Fluent in Greek and English, both written and spoken.
- Strong written and verbal communication skills.
- Comprehensive knowledge of raw materials, recipes, and presentation techniques.
- Skilled in creating and standardizing recipes.
- Able to identify allergens in raw materials and recipes with attention to safety and compliance.
- Proficient in computer skills, including Microsoft Office (Word, Excel), and internet navigation.
- Experienced in the proper operation and management of kitchen equipment and machinery.
- Familiar with HACCP protocols and ISO 22000 standards, including accurate completion of required forms.
- Capable of giving clear instructions and leading a team effectively.
- Able to understand and analyze P&L reports, with a focus on managing food costs.
- Skilled in managing inventory, warehouse stock, and refrigerators within assigned areas of responsibility.
- Proficient in all fundamental hot and cold kitchen techniques.
