We are seeking a dedicated Assistant Director of Food and Beverage to support the Food and Beverage team at AYANA Komodo. This pivotal role involves the management of our dining and beverage services to ensure that both guest satisfaction and operational efficiency are met according to our hotel standards.

  • Develop goals, strategies, and staffing forecasts to achieve operational objectives.
  • Oversee training and development for all employees, ensuring high performance and adherence to standards.
  • Monitor departmental operations, including schedules, payroll, and inventories, to maintain efficiency.
  • Collaborate with chefs and managers to ensure menu quality, pricing, and staff knowledge of offerings.
  • Conduct regular performance reviews and assist department heads in managing their teams effectively.
  • Address guest complaints and implement service improvements for maximum satisfaction.
  • Maintain communication with staff regarding policies, updates, and events to ensure alignment.
  • Supervise equipment maintenance, inventory control, and waste reduction efforts.
  • Lead and participate in department meetings to review operations and develop new initiatives.
  • Assist in creating and analyzing procedures, promotions, and policies to enhance guest patronage.

Requirements

  1. Minimum 5 years of experience in Food and Beverage management, including leadership in luxury hotel settings managing multiple outlets and banquets.
  2. Experience in budgeting, forecasting, and profit & loss analysis.
  3. Ability to implement business strategies to drive revenue growth and profitability.
  4. Proficient in MS Office, restaurant management software, and POS systems.
  5. Knowledge of international cuisines and experience in menu development.
  6. Strong customer service skills to enhance guest experience.
  7. Leadership and decision-making skills to improve team performance in a collaborative environment.
  8. Bachelor’s or Master’s degree in Food & Beverage Management, Hospitality Management, or a related field.
