Responsibilities
- Oversee and manage the preparation of all hot pot ingredients
- Ensure the highest quality of food preparation and presentation in accordance with Ah Yat Abalone's standards
- Maintain knowledge of traditional and contemporary hot pot techniques and recipes
- Monitor and ensure food consistency, flavor, and temperature
- Work closely with the Head Chef to develop and refine the hot pot menu
- Collaborate with other kitchen staff to coordinate and ensure the efficient flow of kitchen operations
- Train and supervise junior kitchen staff and apprentices, providing guidance and feedback
- Maintain a clean, organized, and sanitary kitchen environment in compliance with health and safety regulations
- Manage inventory and supplies related to hot pot ingredients, ensuring timely ordering and stock rotation
- Control food costs and minimize waste through efficient kitchen practices
- Address and resolve any customer complaints or concerns related to hot pot dishes
Requirements
- Only for Indonesian Citizen
- Minimum 3 years’ experience in a similar role within a high-end restaurant, with a focus on Chinese cuisine and hot pot
- Excellent organizational and time-management abilities
- High attention to detail and a commitment to culinary excellence
- Ability to work under pressure in a fast-paced environment
- Good communication skills in English. Knowledge of Mandarin or other Chinese dialects is a plus
- Diploma degree in Culinary or certified equivalent professional training in a related major. Bachelor’s Degree is desirable
